Root vegetable patties

Some left-over root vegetable mash can easily be turned into the most delicious patties the next day!

For these patties, Frida has used a coarse mash made from turnips, carrots, parsnips, parsley root and celery root. You can add potatoes to your mash if you like. The potato, however, was not available to the Vikings and for that reason we leave it out here.

Recipe for 4 people:

About 400 g cold root vegetable mash
3 chopped cloves of garlic
Chopped fresh thyme
Chopped fresh leaves from a parsley root (or use modern parsley instead)
1 egg
4 tablespoons wholemeal flour

Add garlic, thyme, root parsley leaves, egg, flour and salt to the vegetable mash and mix well. Season to taste and make sure the mixture is quite firm.

Place spoonfuls of the mixture on a hot frying pan and cook the patties in butter until golden and crisp on both sides.

Serve these root vegetable patties with flatbread, fresh cream cheese and a tasty salad.
