Lam and cabbage casserole

In the vegetable garden on the Hviding Farm, the farmer grows e.g. kale. It gives a good yield, doesn't mind the cool weather, and it holds an unbelievable amount of wholesome goodness.

Here's a recipe for a hearty casserole with cabbage and cracked wheat from the Viking kitchen:

Recipe for 4 people

1 kg lamb, diced
500 g smoked pork, diced
Onions, finely chopped
Cracked wheat, soaked overnight
Water
Salt
Kale leaves, shredded
Fresh marjoram, finely chopped
Fresh thyme, finely chopped
Top of spring onion, chopped

Cook the lamb, smoked pork and onions in a big pot until browned. Add the cracked wheat and enough water to cover. Leave to simmer until the meat is almost tender. You can add a little more water if necessary. Next, add the cabbage and herbs and let it simmer a few minutes longer. Season to taste and garnish with chopped spring onions.

Serve with for instance flatbread and fresh cream cheese.
