Garlicky goat stew with barley salad

The Zebitz Vikings share the recipe for:

Garlicky and goat stew

Beef stock
Onion, sliced
Lots of garlic cloves, sliced
Apple vinegar or white wine
Goat meat in chunks
Optional: You can add bones for flavour instead of stock

Add everything to a pot over the fire. Boil for at least 3 hours and keep it topped up with water as needed. It should not stick to the bottom, nor become 'soupy'.

Barley salad

Pearl barley
Green beans, chopped
Spring onions, chopped
Chives, chopped
Parsley, chopped
Garlic, chopped
and a little bit of oil

Cook the barley and leave to cool. Mix with the vegetables and herbs. Add salt and oil to season.
