Bread dumplings

A tasty and hearty soup is a great choice on a cold and windy autumn day. Frida has already made a vegetable soup and wants to serve it with bread dumplings. They are easily made of mainly stale, dry, white bread. This is how:

Recipe for 2 people

About 250 g dry white bread
50 g melted butter
1 teaspoonful thyme
1 teaspoonful salt
2 eggs
About 4 tablespoonfuls flour (wheat flour preferably)

1 litre soup (e.g. vegetable, chicken, beef or fish)

Tear the stale bread into small pieces. You should not use the crust! Mix the bread with butter, thyme, salt and egg. Mix it really well and leave it to rest for about 5 minutes.

Add some flour and stir. You may need 3-4 tablespoons of flour to make a rather firm mixture. It's quite sticky and yet you should be able to roll it into small balls.

Put some flour on your hands and form balls of about 2 cm in diameter. Put them on a floured plate.

The soup must the very warm (boiling point). Remove it from the fire (or turn off the cooker) and drop the dumplings into the soup one by one. It's important that the soup doesn't boil at this stage. The dumplings should cook in the warm soup for about 2 minutes.

Serve the soup with the bread dumplings right away.
