Apple with honey-roasted rye bread

The Vikings enjoyed wild apples and were also aware of the benefits of eating apples. In Norse mythology, Idun is the goddess of youth and guards the precious apples which make all the gods and goddesses stay forever young.

On the Viking farm in Ribe VikingeCenter they also have wild apples and like to use them in their cooking. They add a certain freshness to both sweet and savoury dishes.

This apple dessert is a traditional Danish dish.

Procedure

Make an apple sauce from the apples and water. Sweeten it with mead or honey.

Mix rye bread, oats and nuts.

Melt the honey and butter in a pan and let it cook about 10 min. until golden and toffee-like. Careful: It gets very hot and is likely to boil over. Add the rye bread mixture and let it cook over medium heat 5-10 mins. Transfer the mixture to a plate and leave to cool completely.

Chop the cooled rye bread mixture. Whip the cream.

Arrange in small bowls or on plates. First some apple sauce, then some of the honey-roasted rye bread and lastly a dollop of whipped cream

Ingredients

4 persons
  • 500 g apples
  • 1-2 tbsp water
  • Optional: a little mead or 2-3 tbsp honey
  • 250 ml double cream
  • 4 slices stale rye bread, crumbled
  • 1 handful rolled oats
  • 1 handful hazelnuts, chopped
  • 70 g butter
  • 70 g honey

You can, of course, use modern day sugar to sweeten your apple sauce.

Please be aware of the boiling honey and butter. It gets very hot!
